I don't know whether it's because we are in lockdown again, so everyone is filling your Instagram feed with pictures of home baked banana bread or whether perhaps you are trying to be a little bit healthier with some New Years resolutions, but there is something about this cake craving that's hard to ignore.
It is a simple cake that packs a punch of flavour. It really is perfect at any time of day - a cheeky breakfast, morning snack to go alongside your coffee, or perhaps an afternoon treat with a good old cuppa! I'm not saying that it is the healthiest cake in the world, but with 5 bananas in each loaf, I think we can classify it as a January approved cake (try with peanut butter and banana slices!!). Plus as we are in lockdown 3, we need a little something nice to keep us going through the trials of WFH or home-schooling!
You can take yourself down to Tesco and fill your basket with ingredients, try and find the right size tin and wonder who is going to do the washing up after, or you can sit back, relax - pop Bridgerton on the TV and just order your own homemade loaf brought right to your door!
It slices up into 12 portions and can be kept in an airtight container for up to 5 days. It can also be frozen (whole or as slices) - so it will keep you going through lockdown!
