This is one of my favourite cakes to bake as its so quick to make and smells to fresh when it comes out of the oven. It's a one bowl mix (which is great when it comes to washing up!) and uses ingredients that you usually have already in the cupboard.
This recipe comes from my Auntie who often made it when we came to visit as it goes so well with a cup of tea in the afternoon. I think there is something with fruit cakes that makes you feel like perhaps you are being a little bit healthy?!!!
It's a perfect bake to make to transport as it wraps up neatly in foil and can be cut easily into slices.
The best thing about this cake is the sticky lemony glaze that you pour over the cake once it has come out of the oven. If you prick the cake all over with a fork while it is cooling in the tin, the glaze oozes into the cake.
Recipe:
Pre-heat the oven to Gas mark 4.
In an electric mixer, beat together 225g softened butter with 225g caster sugar. Once well mixed, add 4 eggs (one at at time) and beat until light and fluffy.
Sift in 225g self raising flour with the zest of 1 lemon.
Pour the mixture into a greased and lined 2lb tin and bake in the oven for 45 minutes.
Cool cake in the tin on a wire rack.
Melt on a medium heat 85g caster sugar with the juice of 1.5 lemons. Prick the cake all over and pour the sugary mixture to create a lemon glaze.
