Gin & Tonic Cake

For Mother's Day this year, I have decided to launch a new product - a lime Gin & Tonic cake. Every mother deserves spoiling (this year more than ever), so what better way than to treat her to a delicious lime loaf cake that has gin in the mixture, drizzled in to the cake and topped with a gin icing! 3 lots of gin = 3 lots of happiness!

The cake is a light moist 2lb loaf tin cake with lime zest and Gordon's gin combined into the cake mixture. Once the cake has baked and been taken out of the oven, a Fever Tree tonic sugar gin syrup is drizzled over the top. While the cake is warm, this oozes down into the cracks ensuring a very moist loaf! As if there was not enough gin (can there ever be not enough gin??!!!), some more is mixed with icing sugar to drizzle on the top. The cake is then finished with candied lime slices that have been caramelised with sugar and Fever Tree tonic.

The cake will be served in this floral box, perfect to give straight away as a gift (though no judgement if you just fancied treating yourself!). It cuts into 12 slices and can be stored in an airtight container for up to 5 days.
