Rocky Motorway

Last weekend I had a Zoom baking session with my old work friends. We had arranged pre-lockdown to meet up this weekend and catch up over dinner, but with the current situation, we had to change tactics! I find it quite hard to chat in Zoom calls when there are more than a few of you, so we decided it would be fun to do a mutual bake off instead!

We decided to make Rocky Road as its quite a quick and easy to do bake, so you can still chat away while doing it. Also there is the added bonus that our partners would all be very happy with the chocolate feast we were going to create!

We settled on a Twix Rocky Road. You can buy white chocolate as well as the original milk chocolate Twix now, so the mixture of the two chocolate types along with the shortbread and caramel in each bar, makes a perfect ingredient to base the traybake around.

We didn't quite realise until we were baking how naughty (in a good way!) this recipe is! It is just a massive bowl of different types of sugar! One of my friends partners re-named this bake: 'Rocky Motorway' as it was just too big and intense to be called Rocky Road!!!

There is something quite satisfying about melting chocolate into syrup!

After setting in the fridge for a couple of hours, it slices up really easily. My husband has been trying to ration himself so all 25 pieces don't go all in one day - I might have to hide it for a while!

Recipe (makes 25 pieces):

Line a 9 inch square tin with greaseproof paper.

Chop up 350g twix - milk or white chocolate (equals about 14 Twix fingers) and add to a large bowl with 200g chopped shortbread. Mix in 125g mini marshmallows and 100g glace cherries or raisins (your choice!).

In a medium pan, add 125g unsalted butter and 175g golden syrup. Melt this over a medium heat.

Take the pan off the heat and stir in 250g of both milk and dark chocolate. If the chocolate doesn't quite melt, pop it back on the heat for little bursts.

Let the mixture cool for a few minutes and then pour into the large bowl and combine.

Press the mixture into the prepared tin and pop into the fridge to set for 2 hours.
