Sugar free Apple Muffins

I do my best not to eat sugar (which seems a bit ironic being a baker!), as I find that it helps my health. I love a Kit Kat chunky as much as the next person, but over the past few years, I have had to switch out my 3pm chocolate bar for that quick fix to something that will help my body in the longer term. I can eat some fruit or nuts, but sometimes this gets a bit boring.


When I've tried to search for sugar free recipes, a lot comes up (thanks Pinterest), but when I actually drill down to the ingredients, I notice that there are a lot of sugar-replacements such as stevia, coconut sugar, agave syrup, maple syrup etc. Although they make the bakes a little bit healthier, I wanted to try and find something I could bake with NO sugar in at all (refined or otherwise). So far, after a lot of searching, I have only found 3 recipes, so I think it's something I am going to have to keep hunting, or perhaps develop my own bakes!


Today I am going to share the recipe for Apple & Cinnamon muffins, because if you saw my last blog post, I am all about the Autumn flavours! The muffins have ginger, nutmeg, cardamon and cloves which give them a lovely smell and taste.



This bake was quick to do as you whisk up everything into one big bowl. It is an American recipe, so make sure you have a good set of cup and spoon measures.



I used this apple puree, which worked really well, but next time I will try a different almond butter. If it's too thick, then it won't break down in the oven and you end up with some big chunks in the muffins. I have tracked down this almond butter that looks much smoother to try next time. I splashed out and bought some pure vanilla powder to use as I found that all the bottles of vanilla had sugar or alcohol in them. Its quite a lot for a packet, but a little goes a long way and the taste is amazing.



I baked these muffins for 17mins, but next time I shall try 20mins just to crisp them up on top slightly. They keep for up to a week in an airtight container. Perfect afternoon pick-me-up with a cuppa!
