Very Healthy Banana Bread


Ok I know what you are thinking.....'not another banana bread!'. But wait, this is not just a lockdown trend bit of baking for the 'gram. This is a banana bread with a difference - it is actually very good for you as there is not one bit of sugar or sweetener in the entire loaf! I do my best to try and eat completely sugar free, which is actually quite difficult when you are a baker! I searched a long time to find a recipe where there are no replacement sweetness and the flavour of the bake comes from the overripe bananas.

The great thing about this bake is that it is also gluten free as it uses buckwheat flour which gives it some extra bite. As it is a bit healthier than a normal banana bread (bread or loaf, I never know which is the correct term - is it a cake?!!), it is the perfect breakfast on the go and it can easily be stored for a good while, or you can freeze half a loaf for another time.


It is also an easy faff free bake which is handy for when you want to throw something together quickly to use up bananas that are past their best. In fact, the more ripe the bananas are, the better the loaf will taste!

I stumbled across this recipe in a lovely cookbook that I spotted in Oliver Bonas (oh how I miss going in there and oogling their homeware section!). I would definitely recommend it for some delicious healthy and really easy to make recipes - the moussaka is a particular favourite - Simply Good for you by Amelia Freer.


Recipe (makes 10 slices)

Oven 200 degrees centigrade/180 fan


Ingredients

* 4 very ripe bananas (peeled)

* 3 large eggs

* 200g buckwheat flour

* 2 tbsp olive oil

* 80g ground almonds

* 1 tsp mixed spice

* pinch sea salt

* 80g chopped walnuts

* 2 tsp baking powder


Method

  1. Mash the bananas with a fork in a large bowl. Add the eggs and mix well.

  2. Add in the buckwheat flour, olive oil, almonds, mixed spice, salt and walnuts.

  3. Sieve in the baking powder and mix well.

  4. Pour in a lined 2 lb loaf tin and bake for 30 minutes.


You could enjoy the banana bread with a dollop of yoghurt and some squashed berries or my favourite way to enjoy a slice - toasted with peanut butter :)
