There seems to be so many variations on original chocolate bars these days. I was standing in Poundland (great place to pick up some baking ingredient bargains!), looking at the shelves filled with different chocolate bars, when I saw at least 5 different Kit Kat's! Popcorn flavour, peanut butter and even mint! I decided to pick up some White Chocolate Kit Kat Chunky's and googled some new recipes to try with them. I have made so many milk and dark chocolate cookies recently, I thought it would be nice to mix things up and try a white chocolate variation!
The weather was so stormy last week, it was the perfect time to try out a new bake! Nothing beats being cosy in the kitchen with the oven warming the room, the radio on (bit of Kisstory!) and a new project to get stuck into!
The recipe I found used just small Kit Kat's, but I thought having the mixture of the small and chunky chocolate bars would be a nice addition. The cookie dough came together so well. It needed an hour chilling in the fridge before going into the oven for 12 minutes.
One batch makes 18 cookies! You need to spread the balls out onto the baking sheet to avoid them merging together to create one big master cookie (actually, that doesn't sound so bad!).
Once left to cool (so hard to do, when you just want to try one!), they have a lovely crunch on the outside and a really gooey middle. The bits of Kit Kat mixed through each cookie give you a lovely bite alongside the white chocolate chunks.
